Vidalia Onion Souffle

2 Tbsp. butter or margarine
5 medium Vidalia or other sweet onions, chopped
2 cups fresh bread cubes (about 10 slices, crusts removed)
1 15 oz. can evaporated milk
3 large eggs, lightly beaten
1 ¼ cups shredded Parmesan cheese
1 tsp. salt

Melt butter in a large skillet over medium heat; add chopped onion, and sauté 10 to 15 minutes or until tender. Place onion and bread cubes in a large bowl. Stir in milk, egg, 1 cup cheese, and salt. Pour into a lightly greased 1 ½ quart soufflé or baking dish. Sprinkle with remaining ¼ cup cheese. Bake at 350 degrees for 25 minutes or until set.
Variation: Can use 1 ¼ cups shredded cheddar cheese instead of Parmesan cheese.
