2 cups cooked yellow squash (cook only until soft, not mushy)
¾ stick butter, melted
1 tsp. salt
½ tsp. pepper
1 cup chopped yellow onion
1 cup shredded (mild) cheddar cheese
1 cup evaporated milk
2 cups cracker crumbs (saltines)
1 tsp. dried parsley flakes or 1 Tbsp. chopped fresh parsley
Drain squash well. Mash. Add all ingredients and mix thoroughly. Pour into buttered 1-quart dish and bake at 375 degrees for about 40 minutes.
This dish has gotten a lot of compliments at different gatherings. It‟s great for potluck dinners, etc., as a side dish!
