Shrimp Casserole

1¼ pounds shrimp (cleaned and boiled)
¾ cup rice, cooked
1 can cream of mushroom soup
½ Tbsp. lemon juice
½ large onion, chopped
2 Tbsp. margarine or butter
dash garlic salt
dash thyme
salt and pepper to taste
¾ cup grated cheddar cheese
½ cup sour cream
½ bell pepper, cut in rings and par boiled for 2 minutes

Sauté onions in butter until tender. Make a sauce by adding the soup, lemon juice, and seasonings. Fold in rice and shrimp; fold in sour cream and pour into buttered baking dish. Sprinkle grated cheese on top and decorate with pepper rings. Bake at 325 degrees for 30 minutes or until cheese melts or all is thoroughly hot.
