Ruth’s Firehouse Charlie’s Chili

5 pounds chili grind meat
1 pound ground beef
1 pound pan pork sausage
1 can chicken broth
1 can beef broth
1 large chili pod
1 ½ oz. chili powder
1 Tbsp. fresh garlic, chopped
3 teaspoons comino (cumin)
3 teaspoons salt
1 Tbsp. paprika
1 12 oz. can tomato paste
pepper to taste
tabasco pepper to taste
cornmeal can be used as a thickener

Brown meats in large saucepan. Add chili pod, chili powder, garlic, cumin, salt, pepper, paprika, Tabasco, and tomato paste. Cover with chicken broth and beef broth and simmer for 3 hours, covered. Remove chili pod.
Venison can be substituted for chili meat to make a delicious chili. This recipe has won several awards.
