Pumpkin Roll

Roll Ingredients:
2/3 cup pumpkin
¾ cup flour
3 eggs
1 cup sugar
2 tsp. cinnamon
1 tsp. baking soda

Beat eggs and add sugar with whisk. Add rest of ingredients and beat until smooth. Spread evenly over greased cookie sheet. Bake at 350 degrees for 17-22 minutes. Be sure it is cinnamon brown (fully cooked). Take out of oven and turn onto kitchen cup towel, sprinkle lightly with powdered sugar and roll up into towel to let cool.

Filling Ingredients:
1 pkg. cream cheese
1 cup powdered sugar
3 Tbsp. butter
1 tsp. vanilla

Beat all ingredients until smooth.
When the roll is completely cool, unroll and spread filling on inside of roll. Roll closed and chill 2-3 hours. Cut into 1/3” – ½ “slices to serve. Enjoy.
