Oven Breakfast Omelet

Ingredients: 1 dozen eggs, beaten

1 green pepper, chopped

1 small onion, chopped (optional)

1 small carton fresh mushrooms, sliced (optional)

1 (15 oz.) can diced tomatoes, drained

1 lb. Velveeta Cheese, cubed

1 lb. ham, cut in bite size pieces

1 cup sour cream

½ stick margarine, cut into small pieces

Mix all ingredients together and bake in greased 3 quart casserole dish at 325 degrees for 1 hour, or until eggs are set. Yields 8 servings.
