Mock Pecan Pie

Ingredients:
1 cup of pinto beans, uncooked or 1 cup canned and unseasoned pinto beans
1 ½ to 2 cups of sugar
4 oz. butter or margarine, not diet
4 eggs
2 Tbsp. molasses or dark corn syrup
3 tsp. vanilla
½ tsp. salt
Unbaked pastry pie shell
½ cup chopped pecans for topping

Directions:
Cook the uncooked unseasoned beans in water until soft. Cool, drain, and measure 1 cup. If using canned beans, drain and measure.
Mash 1 cup of pinto beans. Next cream sugar and butter together in a medium size bowl. Add well beaten eggs, molasses, vanilla, salt, and beans mixing well. Add the mixture to an unbaked pie shell and sprinkle chopped pecans on top. Bake for 45 to 60 minutes at 350 degrees until pie is firm or until a knife inserted into the middle comes out clean. Makes 8 servings.
