Lemon Pie

1 ½ cups sugar
3 Tbsp. cornstarch
3 Tbsp. flour
Dash of salt
1 ½ cups hot water
3 egg yolks, beaten
¼ cup butter (½ stick)
½ cup lemon juice

Mix sugar, cornstarch, flour, and salt in a saucepan. Add hot water and egg yolks to the mixture, stir well and heat over high until it boils. Reduce heat and stir constantly to avoid sticking. When mixture starts to thicken, add butter and lemon juice. Continue to cook until thick. Remove from heat. Put mixture in already baked pie shell.

Lemon Pie Meringue Ingredients:
3 egg whites
3 Tbsp. sugar
1 teaspoon vanilla flavoring

Beat egg whites until they stand up. Add sugar and beat until stiff. Add vanilla flavoring. Put on top of pie and bake at 350 degrees until golden brown.
