Ingredients: 1-2 pkg. dry yeast dissolved in ½ cup warm water
1 cup Irish mashed potatoes (white potatoes)
2/3 cup shortening
½ cup sugar
1 cup milk (scalded)
1 tsp. salt
Mix potatoes, shortening, salt and milk. Let cool (luke warm). Add yeast mix and enough flour to make thin batter. Let rise until double in size. Add egg beaten and flour to make stiff dough, knead down and place in greased bowl in fridge. Make out rolls, just what you need each time. Let rise about 1 hour. Bake at 350 degrees for about 20 minutes.
