Ingredients: 1 cup oatmeal

1 cup wheat germ

6 cups all-purpose flour

1 Tbsp. salt

1 tsp. yeast

3 cups tepid water

About an hour before going to bed, grind 1 cup of oatmeal in your blender or food processor. Put oatmeal, wheat germ, flour, salt, and yeast into a large bowl. Add tepid water. Stir, and then knead in flour for a few minutes to remove any air pockets. Put it right back into the bowl you used to mix it. Cover bowl with a dampened clean kitchen towel. Leave it on the counter and enjoy a good night’s sleep. In the morning, knock down the dough. Divide it in half and put each half in a buttered bread tin. Cover the tins with parchment paper, leave on the counter. Go to work or enjoy your day. When you come home or after 8-9 hours, preheat oven to 400 degrees. Paint the top of the loaves with milk and bake for about 40 minutes.
