Creamed Spinach

3 Tbsp. butter
3 Tbsp. flour
3 garlic cloves, chopped fine
2 cups half and half
¼ cup Parmesan cheese
1 large bag frozen spinach
1 tsp. Tony Chachere‟s seasoning (can add more to taste)

In a pan, melt butter and add chopped garlic. Brown garlic for 1 minute. Add flour and stir until flour is bubbly for about 1 minute. Add half and half and stir until sauce thickens. Add Parmesan cheese and Tony Chachere‟s seasoning. Set sauce aside. Cook spinach according to package directions. Drain and pat dry. Add to sauce. Taste for seasoning and serve.
