Aunt Margie’s Cream Pie

1 baked pie shell, 9 inch
1 cup sugar
3 egg yolks, beaten
6 Tbsp. flour (level)
3 egg whites
2 cups milk
½ tsp. salt
1 tsp. vanilla

Combine flour, sugar and salt in top of double boiler over hot water. Add milk slowly and cook 10 minutes, stirring constantly. Pour a little of the hot mixture into beaten egg yolks and add to the remaining mixture in double boiler. Cook and stir 4 minutes longer. Cool and add vanilla. (Add ½ cup coconut for coconut pie or 3 Tbsp. cocoa for chocolate pie). Pour into baked pie shell and cover with meringue and bake until browned. For meringue take 3 egg whites, a few grains of salt, 1/8 tsp. cream of tartar and 3 Tbsp. sugar. Beat until stiff peaks form. Spread on top of pie and bake.
